Herbed Rotisserie Chicken Salad On Toasted Brioche


We had a rotisserie chicken from Costco for dinner earlier in the week. Best deal around! We always have leftovers when we buy one of those huge, ready to eat rotisserie chickens, so it's a good thing that re-purposing it is a cinch! We decided to go with chicken salad for our second round of juicy bird. I made a homemade loaf of Brioche (Which, by the way, turned out fabulous!) so that we had something to stuff all of that delicious chicken salad between.

Steve and I worked together to form this beautifully hearty meal. I'm starting to learn more and more about spices and what flavors go where. That skill is hopefully something that will stick with me throughout the years because it really amps up the flavor of food and takes it from ordinary to EXTRAORDINARY!

Over the last few months we have been eating homemade, gourmet tasting food at least 4 times a week and the best part is, we've been doing it on a budget! This meal was no different. It tastes like something you would order in a restaurant! So go ahead, save yourself some money and have a great tasting homemade meal that you can be proud of! Make this chicken salad and DIG IN! 

Herbed Rotisserie Chicken Salad
  • 1/2 rotisserie chicken (equivalent to about 2 boneless, skinless chicken breasts)
  • 1/4 C. mayonnaise with olive oil
  • 1/2 tsp. Italian seasoning
  • 1 T. Parmesan cheese
  • 1/4 C. celery, diced
  • 1/4 C. dried cranberries
  • Dash of salt
  • Dash of pepper
