Sara's Mexican Chicken Skillet!

I can cook, but I'm definitely not a chef, nor do I really know how to go about making something if I don't have a recipe to follow. Unless of course it's throwing chicken into the crockpot with a bottle of b-b-q sauce or making a box of macaroni (macky cheese) with some frozen nuggets of some sort for the kids. Now Steve on the other hand, can cook! He can stand in front of the open refrigerator and pantry for a few moments, pick out 5 or 6 random ingredients, and whip up some fancy meal that ALWAYS tastes good! It must be instinct, and I must be lacking some of that.

Tonight however, I am proud of myself! For the first time ever I pulled out some random ingredients and just ran with it. I planned a meal out in my head with what I pulled from the pantry and refrigerator, second guessed myself a few times, swapped a few ingredients, and ultimately made something edible! I'm calling it...

Sara's Mexican Chicken Skillet!
(Yes, the recipe title actually includes the exclamation point. That's how excited I am!)

 light spray of olive oil
1 medium onion, diced
3 mini sweet peppers, diced
3 cloves garlic, minced
2 boneless, skinless chicken breasts, cubed
1 can chili style diced tomatoes
1/2 bag of frozen broccoli
sprinkle of "mexican" flavored cheese (optional)
dollop of light sour cream (optional)

1 C. brown rice
1 C. water
Olive oil mister

Spray skillet with olive oil. Over medium heat add onion, sweet peppers, and garlic.

Cook about 3 minutes, then add chicken. Cook until chicken is done.

Add broccoli and can of tomatoes, reduce heat, cover, and simmer for about 10 minutes.

Meanwhile, bring 1 C. water to a boil in a small saucepan. Add 1 C. brown rice. Return to a boil, reduce heat and simmer about 5 min.

Serve chicken mixture over brown rice. sprinkle with cheese and add a dollop of light sour cream.

And there you have it! The first recipe for my cookbook!

It was very tasty, but next time I make this I will try a few different kinds of spices to amp up the flavor a bit. Sriracha is always a good addition, but the flavor can sometimes be overpowering.

Not bad for my first attempt of not following a recipe! If you have any suggestions on spices that might be a good addition to this recipe please feel free to leave a comment below!

  1. Good call! Why didn't I think of that!?! I even had some of those in the pantry.

I will try that next time and let you know how it turns out!

    Thanks!
