Baked Nutmeg Cake Doughnuts With Cinnamon Glaze

On our last trip to visit my parents, my Mom offered to take us to the Wilton store. When we got there, all of the Valentine's day stuff was 50% off!!! To top off the amount of excitement I was already feeling, my Mom also surprised me by saying that she would buy me something! I was ecstatic!! But what would I buy? After being in the store for about an hour and STILL not making up my mind, I turned and BAM!

                                                This caught my eye...

The week prior to visiting the Wilton store I was trying to think of how I could make doughnuts without frying them. I quickly pushed that thought aside and made a mental note to come back to it after all of the traveling and holiday craziness was over. With this pan, I didn't have to wait! My mind started running wild with ideas of all of the different ways I could use this pan. (here's the first way I used it)

I baked these for Valentine's day breakfast!
Baked Nutmeg Cake Doughnuts w/Cinnamon Glaze (source: Wilton)

2C. cake flour, sifted
3/4 C. sugar
2 tsp. baking powder
1/4 tsp. nutmeg
1 tsp. salt
3/4 C. buttermilk
2 eggs, lightly beaten
2 T. butter, melted

Preheat oven to 425 F. Spray doughnut pan with nonstick cooking spray

In large mixing bowl, sift together cake flour, sugar, baking powder, nutmeg, and salt. Add buttermilk, eggs, and butter. Beat until just combined. Fill each doughnut cup approximately 1/2 full. (2 T. of batter)

Bake 4-5 minutes or until tops of doughnuts spring back when touched. Let cool in pan for 3 minutes before removing. Repeat with remaining batter. Finish doughnuts with desired toppings. Doughnuts are best served fresh.

Makes 24 doughnuts.

Cinnamon Glaze (source: Wilton)

1 C. confectioners' sugar
3-4 T. milk
1 tsp. cinnamon

In a small bowl, stir together sugar, milk, and cinnamon until sugar is completely dissolved. Use immediately to glaze doughnuts.

This is the recipe that came with the pan. I only changed the name because of the overpowering nutmeg flavor. This could have been due to the fact that I used 2% milk instead of buttermilk. Or maybe it just tastes that way. Either way, everyone in my family liked them and I can't wait to try out more flavors in the future!
